Lobster Ravioli Saffron Tomato Clam Stew

Ingredients

  • 1 Package Monterey Gourmet Foods® Lobster Ravioli
  • 1 Package Precooked IQF Langostino Tails, Trader Joes
  • 2 tbsp Olive oil
  • 2 tsp. Fennel Seeds
  • 1 tb1sp Garlic, minced
  • ¼ cup Fresh Leeks, cleaned & julienne
  • 4 each Plum Tomatoes, seeded & Diced
  • 1 cup White Wine
  • 1 cup Seafood Stock
  • ½ lb. Fresh Manilla Clams – cleaned & rinsed well
  • 1 tsp. Saffron Threads
  • 2 tbsp Wildwood Garlic Aioli
  • 1 tbsp Fresh Italian Parsley, minced
  • Sea Salt & Pepper to taste

Preparation

  1. In a large sauce pan that has a lid, heat oil on medium heat, and add olive oil, fennel seeds, garlic, & leeks, cook 1-2 min. Add white wine, clams, saffron & diced tomatoes, cover and cook until clams start to open. Add Langostinos, cook for 1-2 min & remove from heat. Stir in garlic aioli, sea salt & pepper to taste.
  2. Boil 6 qts. salted water, cook MGF Lobster Ravioli according to package directions.
  3. Plate the cooked ravioli and pour over the stew. Garnish with the minced parsley. Serve & Enjoy
