Ingredients
- 1 pkg Monterey Gourmet Foods Lobster Ravioli
- 1 pkg Precooked IQF Langostino Tails, Trader Joes
- 1 tbsp Vegetable oil
- 2 tbsp Ginger puree
- 1 tbsp Garlic, minced
- ¼ cup Fresh Leeks, cleaned & julienne
- ¼ cup White Wine
- 1 tbsp Lime Juice
- ¼ cup Mae Ploy Green Curry Paste
- 1 can (14 oz) Coconut Cream
- 1 bunch Fresh Scallions, cleaned & sliced on bias
- Sea Salt & Pepper to taste
Preparation
- Heat in large sauté pan, oil, ginger, garlic & leeks for 1-2 min. Add white wine, lime juice, green curry paste and coconut cream, stir and heat until sauce reduces and starts to thicken. Add the Langostinos, sea salt & pepper to taste, remove from heat and set aside.
- Boil 6 qts. salted water, cook MGF Lobster Ravioli according to package directions.
- Add cooked pasta to the sauce in the sauté pan and toss. Plate & garnish with bias cut scallions
- Serve & Enjoy
- Tip: You can also add chopped, roasted & unsalted cashews & chopped cilantro for more texture & flavor.
