Ingredients
- 1 pkg Monterey Gourmet Foods Spinach & Cheese Ravioli
- 1 jar, 25oz Vodka Sauce, Trader Joe
- 1 lb Mini Heirloom Cherry Tomatoes, Trader Joes
- 4 sprigs, destemmed Fresh Thyme
- ¼ cup, chiffonade Fresh Baby Spinach
- 2 tbsp Balsamic Vinegar
- 2 tbsp Olive Oil
- 1 each destemmed Red, Yellow, Orange Bell peppers
- Sea Salt & Pepper to taste

Organic Spinach & Cheese Ravioli
Preparation
- Place of half (1/2) of cut Bell Peppers & half (1/2) of Cherry tomatoes in blender & puree, add to 2 qt. Sauce pan with Vodka Sauce & Heat. Sea Salt & Pepper to Taste.
- Boil 6 qts. salted water, cook MGF Spinach & Cheese Ravioli according to package directions.
- Preheat oven to 400F. Toss together remaining cherry tomatoes & cut bell peppers, balsamic vinegar and 2 TBSP olive oil (sea salt & pepper to taste) in a bowl, and place on non-stick sheet pan in preheated oven. Cook for approximately 3-5 min or until cherry tomatoes start to split, but not burst and peppers are still crunchy. Remove from oven, set aside.
- Toss Heated Ravioli with Sauce, and plate with cooked cherry tomatoes & peppers, top with chopped fresh thyme & chiffonade baby spinach. Serve & Enjoy
- Tip: You can also add extra grated Parmesan or Romano Cheese
