Spinach & Cheese Ravioli with Vodka Cherry Tomato Cream Sauce & Peppers

Ingredients

  • 1 pkg Monterey Gourmet Foods Spinach & Cheese Ravioli
  • 1 jar, 25oz Vodka Sauce, Trader Joe
  • 1 lb Mini Heirloom Cherry Tomatoes, Trader Joes
  • 4 sprigs, destemmed Fresh Thyme
  • ¼ cup, chiffonade Fresh Baby Spinach
  • 2 tbsp Balsamic Vinegar
  • 2 tbsp Olive Oil
  • 1 each destemmed Red, Yellow, Orange Bell peppers
  • Sea Salt & Pepper to taste

Preparation

  1. Place of half (1/2) of cut Bell Peppers & half (1/2) of Cherry tomatoes in blender & puree, add to 2 qt. Sauce pan with Vodka Sauce & Heat. Sea Salt & Pepper to Taste.
  2. Boil 6 qts. salted water, cook MGF Spinach & Cheese Ravioli according to package directions.
  3. Preheat oven to 400F. Toss together remaining cherry tomatoes & cut bell peppers, balsamic vinegar and 2 TBSP olive oil (sea salt & pepper to taste) in a bowl, and place on non-stick sheet pan in preheated oven. Cook for approximately 3-5 min or until cherry tomatoes start to split, but not burst and peppers are still crunchy.  Remove from oven, set aside.
  4. Toss Heated Ravioli with Sauce, and plate with cooked cherry tomatoes & peppers, top with chopped fresh thyme & chiffonade baby spinach. Serve & Enjoy
  5. Tip: You can also add extra grated Parmesan or Romano Cheese
